Boomer Grigsby of Illinois State has had a good first year as a linebacker with the Kansas City Chiefs and Jared Allen of Idaho State has been a force for the Chiefs at defensive end for three years.
Linebacker Dexter Coakley of Appalachian State is still around with the St. Louis Rams, but suffered a broken ankle (his first major injury ever) a few weeks back. Daniel Wilcox is another ASU alum playing tight end in the NFL for the Baltimore Ravens, who also have former McNeese State star B.J. Sams as a returnman.
RB Adrian Peterson of Georgia Southern is still hammering along with the Bears. QB Chad Pennington of Marshall had another injury-plagued year with the Jets. Of course everyone knows of the continuing saga of Chattanooga's Terrell Owens and Marshall's Randy Moss. David Patten of Western Carolina is still playing WR in the league with the Redskins, as is FB Brad Hoover of WCU with the Carolina Panthers and WR Troy Brown of Marshall with the Patriots.
I saw 2004 I-AA.org lineman of the year Michael Roos (Eastern Washington) playing on the offensive line for the Tennessee Titans a couple of weeks back. Of course, Steve McNair of Alcorn State is winding down his career as the Titans' quarterback.

I think "saw significant action" was the question.

Ah, Pete, I'm watching the Raiders-Giants right now and I've heard Randall Williams' name for the Raiders. And checking the players section on the ESPN web site, I see the following listing:

On the NY Giants roster
Curtis Deloatch (North Carolina A&T)
Lewis Kelly (South Carolina State)
Jim Finn (Penn)
Brandon Jacobs (Southern Illinois)
Willie Ponder (SE Missouri State)
Rich Seubert (Western Illinois)
Visanthe Shiancoe (Morgan State)
Micheal Strahan (Texas Southern)

William Peterson (Western Illinois)-On IR
Finn, Seubert, and Whittle have started, and have certainly helped in the makeshift offensive line. Not familiar with Lewis Kelly, but given the juggled nature of the OLine this season, he might have seen some time. Deloatch sees a lot of time in the secondary. Ponder has become a fairly dangerous kick returner. Shiancoe is the 2nd TE, mostly a blocker, but also catches passes. He started tonight's game against the Raiders with Shockey injured. Jacobs is the featured short-yardage back, and gets most the carries down near the goal line. Peterson is a big part of the secondary, when he's not hurt. And you've probably heard of Strahan, he's developed into a nice pass rusher ;)
