FUBeAR will be rooting for G-W because them winning benefits Mercer & the SoCon, BUT the Eastern NC vinegar-based BBQ around Campbell is much, much, much better than the ketchup-y tomato based BBQ found around Boiling Springs, NC, home of the Runnin’ Bulldogs.

2) As you know, geographically/topographically, NC is divided into 3 regions - Mountains, Piedmont, and Coastal Plains. FUBeAR made a killer salt flour map depicting this in the 4th grade. He can still taste it - for some reason, the green food coloring he used for the Coast tasted much better than the other 2 regions.

But these geographic regions are not replicated in the 3 BBQ styles in NC. Eastern NC BBQ goes from the Coast to almost Greensboro. Draw a northbound line from Rockingham thru Elon College, NC and you’ll more or less have the ‘pure’ vinegar line. Then, you get to Lexington style, named for Lexington, NC - SW of Greensboro and NE of Charlotte. This style is also vinegar-based, but has enough tomato in it to turn the (thin) sauce reddish. This is really good BBQ - not as good as Eastern NC, but still quite tasty.You can then use, roughly, I-77 as the western demarcation point for this style. Then you get to what FUBeAR hates that people call BBQ - it’s that ketchup-y, thick tomato-based sauce that is often sticky and slathered on. This is western NC down thru the upstate of SC and into GA…and beyond. This, while not perfect, is the most accurate map available (that FUBeAR found) and includes the SC mustard-based variety.

So, while Duke is located in the Piedmont of NC, the BBQ in their Press Box, is certainly Eastern NC BBQ if Ryan says it is.

BTW - As several members of the Coaching Staff, including Head Coach, Tre Lamb, have Mercer in their Playing and/or Coaching DNA, FUBeAR is going to pick the Runnin’ Bulldogs to win this game over the host Fightin’ Camels, but expects it to be a free-wheelin’ brawl of a Football game, decided late, most likely by a critical turnover.

BTW - the sauce looks like red sauce in the picture on the site. Thinks that’s just the bottle & the pic. If you look closely at this pic, you can see the wood grain on the wall thru the sauce in the bottles.

I like vinegar based BBQ - though it's not easy to find here. I also like the SC mustard based BBQ.

I become a pariah here in Texas when I mention that I like the SC mustard based sauce, also. I don't really have a single favorite. Most all have good qualities.

Really dunno which style (Lexington or Western NC/Upstate SC) of BBQ Gardner-Webb claims as ‘theirs.’ Gonna guess it’s the ketchup-y kind given their proximity to SparkleCity, SC. So…that style, honestly, is not even worth discussing. But Lexington-style definitely is.

FUBeAR is much more of an expert on the #1 Eastern NC Style, but he is conversational in Lexington style.

That said, FUBeAR is not familiar with Speedy’s. For Lexington-style, he recommends the old (90 years+) reliable Stamey’s in Greensboro (2 locations) or Cook’s, located just south of Lexington, NC past a bunch of fields and between a few trailer parks…and you can’t miss it!

GW's is Lexington-style barbecue, as served up by Red Bridges and, better, Alston Bridges restaurants.
OK - good to know - so, G-W & Boiling Springs identify more with Shelby than SparkleCity. Thanks for weighing in.

FUBeAR has always known Shelby to be the hometown of the greatest basketball Player in history, David Thompson. Yes, DT was better than him, and him, and also him. He just had knee and nasal (so to speak) problems that hampered & prematurely ended his Pro career. But - good to know Shelby has some quality BBQ in the Lexington style. Will have to check that out someday.

As noted, FUBeAR is pulling for the Runnin’ Bulldogs to win … and, thus, to receive the additional benefit of the better-than-Lexington-style BBQ that the hopefully-vanquished Camels will provide.

As a G-W fan…your thoughts on the game, GWebbinIt?

It'll probably come as no surprise to hear that I've been conditioned by our past to be nervous about meaningful in-conference games. (We don't have to win this one, it's true; but it's always meaningful to GW fans when we play Campbell.) We've made a habit of tripping ourselves up.

I feel better about this team, though, than I have about any for the past several years. We should score--just hoping the defense will look more like it did against Coastal, Marshall, and especially Liberty than it did against Mercer and Bryant.

I've got a little catching up to do on this thread....I'll start with Stamey's is really really good. However, it is the "high brow" BBQ stand. The fancy neon signs and the parking lot that is paved and has been sealed and re-lined since the Bush administration...and them taking credit cards tells you that. I'll say that when the Dunn's want to take their ladies out for anice dinner, they probably go to Stamey's, but when the Stamey Boys want to get the best Que, and have the authentic experience, they head over to Speedys!!!

The short answer is NO!!!!

Alabama White is not BBQ sauce. I'm not saying I don't enjoy it on a smoked chicken....but it ain't BBQ sauce. It is alot like Ridgewood BBQ up here in the Tri Cities...IT is good, Ilike it, but it ain't BBQ, it is lunchmeat ham with BBQ sauce on it.

I Love all kinds of slow Cooled smoked meat....but there are a few criteria for it to be called BBQ

1. It has to be cooked outside (or in a building specifically designed for it.
2. IT must be over a real flame...no electric..
3. There must be a pile of split hardwood within 15' of the pit.
4. it must taste good without sauce...sauce should accentuate the flavor, not mask it.
5. (I'm softening on this one) it has to be PORK Whole hog, shoulders, butts, whatever...Just pork!
6. Chopped is always superior to pulled Chopped lets you hide the fat and bark in the mix...and thats where the flavor comes from....pulled removes most to the fat....c'mon, it's BBQ not a salad...eat the fat!
7. It should be served on paper...either a sandwich wrapped up in paper, or a paper plate...exception: Styrofoam boxes are acceptable for togo orders...but BBQ served on reusable dishes with silverware are automatically subpar.
8. It must be served with sweet tea....I do have to cut mine to half sweet, but still that is the drink of choice.

This should be a fun one. The BBQ Bowl is always a saucy, piss & vinegar throw down. Neither of these Teams is getting an At-Large bid and, surprisingly, the outcome of this game will have no impact on the conference championship, so it’s just pride and BBQ on the line. G-W is an excellent FCS Football Team. You don’t go toe-to-toe with Coastal Carolina, Liberty, and Marshall without talent. Sure, Mercer blew them out at home, but the Bears are/should be a top 5, at least Top 8, FCS Team. Campbell is huge and hugely talented - the Portal has been good to the HumpedHorses - but they really aren’t a great Football Team. In a wild, wood-fired battle in the pit…

FINAL SCORE: Gardner-Webb 45 - Campbell 44



Pretty close - think FUBeAR’s gonna reward himself with an order of BBQ from Wllber’s to eat when seeded Furman & seeded Samford are playing their home games in Round 2 of the Playoffs!

I found 2 quarts of Wilbers in my freezer Yesterday. Had two sannys for dinner tonight. One with a tangy red BBQ sauce and one with a white BBQ sauce that was pretty good as well which surprised me. Oh and yes I put coleslaw on both. :D

Glad you ordered and enjoyed.

Not sure about that White Sauce??? That’s kind of a North Alabama & Tennessee thing. As far as FUBeAR knows, Wilber’s only sells their vinegar-based sauce which picks up a red tint from the red peppers, but is not a tomato-based BBQ sauce. There’s no tomato in it.

As far as adding slaw to an Eastern NC BBQ Sandwich, that’s cool. FUBeAR doesn’t, but it’s certainly within spec.

Not sure about that White Sauce??? That’s kind of a North Alabama & Tennessee thing. As far as FUBeAR knows, Wilber’s only sells their vinegar-based sauce which picks up a red tint from the red peppers, but is not a tomato-based BBQ sauce. There’s no tomato in it.

As far as adding slaw to an Eastern NC BBQ Sandwich, that’s cool. FUBeAR doesn’t, but it’s certainly within spec.

The sauce I got from Wilburs I gave to a friend of mine for X-mas last year with a quart of Wilbers chopped pork.
The red sauce I used was a tangy sauce from TX that isnt too thick. The White sauce was a recipe from Alabama I think. it was tangy as well. And it was white not clear like NC white sauce.

Ooh - now I want to have a chopped pork with bacon to test out which one makes the other one better.If by “improve on the experience” that the wonderful BBQ from Wilber’s would improve those vulgar sauces, then FUBeAR is certain you are correct, but seems to FUBeAR that it’s a bit like using expensive pot pourri in a bus station men’s room.

And, on the flip side, as you know, Wilber’s BBQ, really, any Eastern NC BBQ, done right doesn’t need any added sauce at all. Putting that tomato-y glopjuice & God-knows-what is the base of that white smeglatinous substance on Wilber’s BBQ is like putting Lady Gaga makeup on Grace Kelly…which is why it’s a capital offense.

Carolina is not Vinegar, thats Easter and a little bit of Lexington. Western is the tomato base and can be sweet. SC is just crap with mustard

Had friends that said "I don't want my BBQ already chewed" but I didn't care. After I ate that BBQ, I was ruined because I have never liked what we have here since, and that restaurant has been gone for years. I simply cannot find real NC Barbecue like that was anywhere and believe me I have tried and tried. I even tried a few years ago at the Outer Banks of NC and nope, it wasn't even close. Totally agree about the red sauce - not near as good.

There is no known North Carolina BBQ which uses WHITE sauce.

The vinegar-based sauce of Eastern NC BBQ is clear-ish. It can pick up a little color tint from the red peppers that can be used to season it…but, generally would be described as “clear” - not white. This is the best…and, if the meat is prepared right…you shouldn’t need to add any additional sauce. This is the BBQ you find East of Greensboro, NC.

Lexington-style BBQ sauce is thin, like the Eastern NC sauce, and also vinegar-based, but there’s tomato in there because it is much redder than the Eastern NC sauce and is served warm at the table. People always add it to their Lexington BBQ. This is very good. This is mostly found in the center of NC, but also at better BBQ joints in Western NC.

Contrary to what “The Kitties” has said here and what you will find in most “literature,” there is a 3rd type of BBQ sauce in NC, which you start seeing when you get west and south of Lexington - it’s thick, tomato-heavy, and sweetish - like the awful GA BBQ sauce. Edible, but not good.

Also - different meat - Eastern NC - whole hog / Lexington - pork shoulders only / Western NC - tomato-y goop - doesn’t matter what kind of meat they use. The sauce ruins it.

Back to this thread....I noticed FooBear's original map include Randolph and Chattam counties in the Redish sauce category...I'd sya you have quite the divide in these two counties. Vinegar with and without tomato added. I am a HARD LINE VINEGAR (NO KAT-S#i+) guy....But I have many friends that add the red to their Vinegar sauce, just to get a little sticky in the sauce. Catchup just lets the sauce hang around a little...

Texas- often amazing but you will run into a stinker here and there

rest of the country- hey it is BBQ, it is usually at least worth a try, sometimes you find something nice, but be prepared for possible disappointment

the best i have had outside of Texas is a place called Slaps in the area of KC not too far from what used to be called Kemper Arena
unfortunately since moving back to SD, i dont find anything in SD that is much more than a bit above average

CH, While I'll bet this is incredibly good, and that skin looks like it is crisped to perfection...and I appreciate the effort required to hand turn a spit for hours on end...there is just something about a whole hog laying on its own skin and basting in its own juices (plus some vinegar and rub)...reaching in with a rubber gloved hand and twirling that backstrap tenderloin around your first two fingers.....MMMMMMMMM...THe spitted pig loses those juices...it is still very good and I appreciate it, but it ain't quite the same.

We've done that several times at picnicks and family reunions. Best tasting pork right off the bone. Don't even need to add anything to it.

It is difficult to take Mr. A. Buscemi (prolly not a native Tar Heel - yep - FUBeAR ascertained that he grew up in the DC area, though he does get some BBQ, if not mathematics, chops via his years in Columbia, SC, as a Gamecock Alum) and/or his editors seriously when counting to 10 appears to pose an insurmountable obstacle.

That said - FUBeAR does not see a Goldsboro establishment on the list, as OhioHen claims…so his credibility as a guide for this article is also in question. While Grady’s BBQ is only ~8 miles from Wilber’s, it is in Dudley, not Goldsboro. Perhaps, just as the author/editors miscounted, OhioHen misread “Greensboro” (Stamey’s) as “Goldsboro.”

Anyway - now that we have all that, more or less, sorted….

Heard of most of these - mostly good things - eaten at 1/3rd of them. All good.


Note that there is only 1 listed west of the Piedmont of NC - Red Bridges in Shelby…Shelby is sort of unique, as it is more CLT Metro / Upstate SC / Piedmont NC -oriented than it is Western NC.


So … all-in-all, beyond the poor counting, FUBeAR takes little exception to this article. Perhaps Wilber’s was not included with the the 9 of “10” listed because it’s a ‘given’ that Wilber’s would be on any such list.

SBR is my go to for BBQ meatballs.

SBR Wing sauce is pretty good if you add a stick or two of butter and some lime juice.

Grady's in Dudley NC is just south of Goldsboro, so he was close.

Back in the day Scott's BBQ in Goldsboro was excellent. When Mr. Scott passed (I think in the 90s, memory fails me a bit on how long) his son's ran it for a while as takeout only. His sauce is still sold as Scott's BBQ Sauce. I know the Foodlion Stores in eastern NC have it, but really do not know how far it reaches in other parts of the country. Vinegar based with a bit of bite for my taste.

I use this stuff as my base for BBQ sauce. I add raspberry preserves/jelly, mustard, hot sauce, honey, salt/pepper/onion salt and a little garlic.
